Ingredients:

  • 1 3/4 cups self raising flour – sifted
  • 1/4 cup plain flour
  • 1 tsp ground cinnamon
  • 1/3 cup dried Munstead lavender
  • 2/3 cup brown sugar
  • 1/2 cup skim milk
  • 2 eggs – lightly beaten
  • 50 g butter – melted
  • 2 large over-ripe bananas – mashed

Method:

  1. Preheat over to 180 C
  2. Sift flours and cinnamon a large bowl. Add dried lavender & sugar. Stir to distribute evenly.
  3. Mix eggs, milk, slightly cooled melted butter and mashed banana in a small bowl.
  4. Make a well in the flour and add fluids/banana mixture. Stir to lightly combine ingredients.
  5. Pour mixture into a greased loaf pan.
  6. Bake at 18 C for approx 50 minutes.
  7. Serve with butter.
