Ingredients:
- 1 3/4 cups self raising flour – sifted
- 1/4 cup plain flour
- 1 tsp ground cinnamon
- 1/3 cup dried Munstead lavender
- 2/3 cup brown sugar
- 1/2 cup skim milk
- 2 eggs – lightly beaten
- 50 g butter – melted
- 2 large over-ripe bananas – mashed
Method:
- Preheat over to 180 C
- Sift flours and cinnamon a large bowl. Add dried lavender & sugar. Stir to distribute evenly.
- Mix eggs, milk, slightly cooled melted butter and mashed banana in a small bowl.
- Make a well in the flour and add fluids/banana mixture. Stir to lightly combine ingredients.
- Pour mixture into a greased loaf pan.
- Bake at 18 C for approx 50 minutes.
- Serve with butter.
