• 1 cup plain flour – sifted
  • 1 cur rolled oats
  • 2/3 cup brown sugar
  • 2/3 desiccated coconut
  • 1/3 cup dried Munstead Lavender
  • 125 g butter – chopped
  • 2 tbs golden syrup
  • 1/2 tsp bicarbonate of soda


  1. Preheat over to 160 C.
  2. Line a baking tray with baking paper.
  3. Combine oats, flour, sugar, coconut, lavender and bicarbonate of soda in a large bowl.
  4. Add butter, golden syrup and water to a small saucepan. heat gently, while stirring until bitter is melted.
  5. Stir the butter mixture into the oat mixture.
  6. Roll mixture into balls (each ball = approx 1 tbs).
  7. Place balls on tray approx 5cm apart and flatten slightly.
  8. Bake at 160 C for 10-12 minutes until they are a light golden brown.
  9. Remove from oven and allow to rest on the tray for 5 minutes then transfer to a wire rack to cool completely.
  10. Serve with your favourite lavender tea.
