Ingredients:
- 1 cup plain flour – sifted
- 1 cur rolled oats
- 2/3 cup brown sugar
- 2/3 desiccated coconut
- 1/3 cup dried Munstead Lavender
- 125 g butter – chopped
- 2 tbs golden syrup
- 1/2 tsp bicarbonate of soda
Method:
- Preheat over to 160 C.
- Line a baking tray with baking paper.
- Combine oats, flour, sugar, coconut, lavender and bicarbonate of soda in a large bowl.
- Add butter, golden syrup and water to a small saucepan. heat gently, while stirring until bitter is melted.
- Stir the butter mixture into the oat mixture.
- Roll mixture into balls (each ball = approx 1 tbs).
- Place balls on tray approx 5cm apart and flatten slightly.
- Bake at 160 C for 10-12 minutes until they are a light golden brown.
- Remove from oven and allow to rest on the tray for 5 minutes then transfer to a wire rack to cool completely.
- Serve with your favourite lavender tea.
